  Whenever my tastebuds get homesick, I always crave my dad’s special chicken feet. He always picks out the fattest chicken feet at the market and cooks them in a thick fermented broad-bean sauce.

  每当我的味蕾开始犯思乡病,我就渴望吃到爸爸做的特别的凤爪。他总是能挑到市场上最肥的凤爪,再用浓浓的蚕豆酱烹制。

  When I tell some of my friends this, they say, "Come on. That’s too coarse for a girl."

  But I’ve never shied away from the fact that I love chicken feet, duck necks, chicken heads, rabbit heads, pig hooves, pig tails and things like that.

  What’s not to like?

  Salty, spicy or sweet, nothing tastes better. I especially love the spiciness, which adds much more fun to eating.

  Your tongue hurts and you have to inhale heavily for the air to take the spiciness away, but you can’t stop eating because it’s so damn good. Just think of those chunks of duck neck with the red pepper oil oozing out, your hands all messy and covered with oil, and the fun of nibbling away at the tiny pieces of meat attached to the bones!

  I love lobster, but I love crawfish more, which are called "small lobsters" in Chinese. Compared to crawfish, which require you to peel their shells off and watch out for splashing sauce, eating lobster is just so boring.

  我喜欢吃龙虾,但最爱的是被中国人称为小龙虾的一种爬虾。吃小龙虾,你需要剥掉它的外壳,还得小心它的汁水飞溅,相比之下,吃龙虾是多么的无趣。

  These are the perfect foods to eat with a beer. Many people including myself like to sit in a shabby restaurant or night snack stand, and talk with their friends over a few beers and some chicken feet or crawfish.

  有一些完美的食物适合配着啤酒吃。很多人包括我自己都喜欢坐在一个大排档或者夜宵摊上,边喝着啤酒,吃着凤爪或小龙虾,边和朋友们侃大山。

  I’ve tried them with cocktails and wine too, and it turns out they’re better than peanuts or popcorn when drinking alone. All the nibbling makes you feel you are not lonely.

  我也曾试过用鸡尾酒和葡萄酒来配凤爪或小龙虾,结果证明,当你一人独饮时,它们胜过花生爆米花之类。这种一点点的去吃掉它们的感觉会让你觉得你并不孤单。

  One of my foreign friends once told me that chicken feet creep her out because they remind her too much of the fact that she’s eating a dead animal.

  "Well, don’t you also eat whole fish?" I asked her. "And aren’t you fine looking into their dead eyes?"

  I think it’s great that Chinese cooking uses every part of the animal; after all, survival is about making use of everything you have access to.

  I once read that this kind of culinary habit originated from a lack of food sources in ancient times. The limited amounts of meat available were cooked in ways that would maximize the flavor and allow people to eat them by nibbling away.

  我曾在书中了解到,这种烹饪习惯源自古代食物来源的匮乏,故而人们将可获得的数量有限的肉类,用多种方式烹饪,使食材风味最大化,同时容许人们一点点吃掉它们。

  Now as people have access to large amounts of meat, they are gradually becoming more open to cooking steak or roasting whole chickens, instead of making things like stir-fried meat with vegetables.

  现在,随着人们能获得大量的肉类,他们逐渐变得更加豪放,烹饪牛排或者烤全鸡,而不是以往的肉炒蔬菜之类。

  But the memory of delicious chicken feet and everything else remains in our DNA.

  但是美味凤爪和其它所有好吃的记忆,已然停留在了我们的身体里。

  Some people eat to live, but apparently, some of us also live to eat. And one of our favorite things to eat is foods that take a little - or a lot - of effort.

  有些人吃东西是为了活着,但很显然,我们中的一些人活着就是为了吃东西。而吃货们最喜欢吃的东西之一就是吃起来需要付出一点儿——或者很多的——努力。

  After all, if the most desirable girls are the ones you have to spend money and energy to chase after, it makes sense that the best foods should be the ones you have to work for. Otherwise, what’s the fun in it?
